Ivar’s Acres of Clams and Salmon House full-service restaurants are known for their traditional, Northwest focused and award-winning seafood. Now you can add “BBQ Restaurant” to their storied histories. Though the restaurants are now slinging ‘Q, Keep Clam because signature seafood favorites and new, classic barbecue options are available online (for in-store or curbside pick-up) and delivery.
Customers can order barbecue and southern comfort classics which include a quarter or half-rack Smoked Pork Spare Ribs with chipotle -peach BBQ sauce; Smoked Pulled Pork with tangy house BBQ sauce, Uli’s Famous Sausage Louisiana Hot Links; or half or full-pound Fried Chicken Strips with honey mustard sauce, which is prepared with buttermilk and dredged in 11 herbs and spices.
“Pitmaster” and Executive Chef Chris Garr was inspired by simple, classic barbecue he’s prepared for family and friends over the years, focusing on Northwest-sourced pork cuts that are not only popular with barbecue aficionados (and tested well with employees and guests), but travel well. Meat is marinated and dry rubbed with a secret blend of seasonings, resting for two days so flavors can permeate. The ribs and pork are then smoked with 100% applewood and slow roasted for hours.
Though barbecue is the name of the game, mouthwatering sides hold their own and can be ordered with any combination plate or as a standalone. Featured sides include 5-hour, slow cooked Bourbon Baked Beans with sweet/tangy sauce, bacon and fresh jalapenos; Ivar’s Classic Coleslaw; Loaded Sour Cream Red Mashed Potatoes with Tillamook Cheddar Cheese, house-smoked bacon and green onions; Red Potato Salad, Ivar’s Signature Cornbread Pudding; and thick cut Dipper or Sweet Potato Waffle Fries, which can also be ordered topped with smoked pulled pork, mild BBQ sauce and green onions .
“Our founder was never afraid to try new things or new concepts depending on trends and his guests’ tastes,” said Chris Gleason, Director of Operations for Ivar’s full-service restaurants. “Our chefs have been successfully barbecuing and smoking select seafood and meats for years, in-house, on a smaller scale. We saw an opportunity to expand some of our product offerings, especially with the exponential increase of online orders and delivery within the Seattle market,” he added.
Full barbecue menus are available for online ordering and pick-up as well as through delivery within a 7-mile radius of the restaurants (greater Downtown Seattle, Wallingford/Fremont, Greenlake, Ballard). Guests visiting Ivar’s Acres of Clams or the Salmon House , for dine in, can enjoy a small selection of signature items listed on the menus.
